white, yolk AND if possible the membrane between shell and white, which is VERY nutritious - the SHELL is also good for you and can be ground up and mixed with other things |

broccoli, spinach or onions: this optimises the digestion of nutrients |

HOW TO COOK? |
- Don't cook in high temperature oils. BOILED OR POACHED IS MUCH BETTER.
- If you MUST have a fried egg then use extra virgin olive oil.
